Red Chicken Curry
INGREDIENTS
500g Chicken breast
2.5Tbs Red curry paste
1 Tbs Coconut oil
1 can Light coconut milk
1 tsp Soy sauce
1/2 Brown onion diced
1 Red Capsicum sliced
METHOD
Cut chicken breast into bite sized pieces
Cut up onion and capsicum
In a wok, place on medium heat and stir together red curry paste and coconut oil
Add 1/4 cup of coconut milk, soy sauce and onion and cook for 3 minutes
Add chicken and all but 1/4 cup of coconut milk and cook for 6 minutes or until chicken is white
Add capsicum and rest of coconut milk
Simmer to cook, then turn off heat to cool and either serve or store.
