Red Chicken Curry

INGREDIENTS

500g Chicken breast

2.5Tbs Red curry paste

1 Tbs Coconut oil

1 can Light coconut milk

1 tsp Soy sauce

1/2 Brown onion diced

1 Red Capsicum sliced

METHOD

  1. Cut chicken breast into bite sized pieces

  2. Cut up onion and capsicum

  3. In a wok, place on medium heat and stir together red curry paste and coconut oil

  4. Add 1/4 cup of coconut milk, soy sauce and onion and cook for 3 minutes

  5. Add chicken and all but 1/4 cup of coconut milk and cook for 6 minutes or until chicken is white

  6. Add capsicum and rest of coconut milk

  7. Simmer to cook, then turn off heat to cool and either serve or store.
