Slow Cooked Barbecue Chicken Meal Prep
INGREDIENTS
2kg chicken breast, dried with paper towel
2 cups low sugar barbecue sauce
1 packet barbecue seasoning
(I use McCormick’s Slow and Low Smokin’ Texas BBQ Rub)
METHOD
Dab excess water off chicken with paper towels and place in slow cooker
Cover with 2 cups of low sugar barbecue sauce and spice mix and stir
Cook for 5 hours on high
When done, shred the chicken with two forks and leave for 5 minutes to absorb excess sauce
Take out of slow cooker and either distribute into containers or store
