Slow Cooked Barbecue Chicken Meal Prep

INGREDIENTS

2kg chicken breast, dried with paper towel

2 cups low sugar barbecue sauce

1 packet barbecue seasoning

(I use McCormick’s Slow and Low Smokin’ Texas BBQ Rub)

METHOD

  1. Dab excess water off chicken with paper towels and place in slow cooker

  2. Cover with 2 cups of low sugar barbecue sauce and spice mix and stir

  3. Cook for 5 hours on high

  4. When done, shred the chicken with two forks and leave for 5 minutes to absorb excess sauce

  5. Take out of slow cooker and either distribute into containers or store
