Grab and Go Banana Bread

Ingredients

  • 4 eggs

  • 2 bananas

  • ¼ cup oats

  • ¼ cup honey (optional)

  • 30g walnuts chopped

  • tsp cinnamon

Method

  • Preheat oven to 180°C and grease a pan with olive oil

  • Place all ingredients except walnuts into a blender, and blend until smooth

  • Pour mixture into pan, and sprinkle walnuts on top. Place in the oven.

  • Cook for 30 minutes, or until a skewer inserted comes out clean

  • Take out of oven and allow to cool before cutting into 4 sections. Store for quick grab and go breakfast, or serve with toppings of your choice
