Choc Chip Banana Bread Muffins
Ingredients
3 ripe bananas
1/2 cup rice malt syrup (or maple syrup if you want them sweeter)
1/3 cup coconut oil
2 eggs
2 tsp vanilla
1 tsp apple cider vinegar
2 cups almond flour
2/3 cup oat flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup dark choc chips
Method
Preheat oven to 180 degrees
Combine banana, rice malt syrup, coconut oil, eggs, vanilla and apple cider vinegar in a food processor
Add flours, baking soda, cinnamon and salt and process until smooth
Add choc chips and stir through mixture
Grease or put patty pans into a muffin tray with 12 spaces. Divide mixture evenly between 12 spaces
Bake in oven for 20 mins or until a skewer inserted comes out clean.
Leave to cool before serving or refrigerate
