Chilli Con Carne Meal Prep
This chilli con carne meal prep uses kangaroo mince, because it is low in fat, high in iron and is quite low on calories per grams. You can also use low fat beef mince if you like.
Ingredients
1kg Kangaroo mince
1 onion
1 clove garlic
2 packets taco seasoning (or make your own)
1 can crushed tomatoes
1 can black beans
1 can corn
2 TBS concentrated tomato paste
Method
1. Cook onion and garlic in deep saucepan until clear
2. Add kangaroo mince. Cook on medium high heat until browned
3. Add crushed tomatoes, tomato paste, black beans, corn and taco seasoning to the pan.
4. Stir until combined and simmer on low for 5 minutes, until cooked through
