Spinach, Pumpkin and Bacon Frittata
Ingredients
10 eggs
200g Cooked pumpkin
20g Spinach
1/2 onion
200g Rindless Bacon
(To make recipe vegetarian, swap bacon for 100g feta cheese or omit entirely)
Method
1. Preheat oven to 180 degrees Celcius
2. Cook pumpkin either by steaming or roasting
3. Cook onion in a pan and once clear, add the bacon. Cook until crispy.
4. Line a baking tray with baking paper or cooking oil
5. Mix eggs in a bowl and then add cooked onion, bacon and spinach
6. Place cooked pumpkin on the base of the pan and pour egg mixture over the pumpkin.
7. Cook for 30 minutes in fan forced oven
Cool and serve
