Pine Nut and Spinach Side Salad

INGREDIENTS
1 bag Spinach
50g Pinenuts
10 Cherry Tomatoes
100g Fetta Cheese
1 Grated Carrot

METHOD
Heat a small frying pan on low with a tsp of olive oil. Place pine nuts on pan and stir continuously until golden brown and fragrant (watch as they will burn easily!)
Place pine nuts in a bowl to cool down
Cut tomatoes in halves, and grate carrot and cut fetta into small cubes.
Toss spinach, tomatoes, carrot and fetta together and add pine nuts when cooled.
Serve
