Pumpkin Soup

Stormy winter weather calls for Pumpkin Soup! ðŸŽƒ Here is a simple recipe for a warm and comforting soup!

Ingredients

1.2kg pumpkin
1 onion, sliced
2 garlic cloves
3 cups vegetable or chicken stock
1 cup water
Salt and pepper to taste

Method

1. Peel the skin off the pumpkin and scrape seeds out. Cut pumpkin into 3cm chunks.
Place the pumpkin, onion, garlic, stock and water into a pot. Bring to a boil, uncovered, then reduce heat and simmer until pumpkin is tender (about 10 mins)
3. Remove from heat and use a stick blender to blend until smooth.
4. Season to taste with salt and pepper.
5. Optional - serve with gluten free toast or I like to add some cooked chicken into the soup to add more protein!

To increase the fat, you can add some sour cream, and increase protein mix in chopped chicken breast.
