Lemon Chicken Stirfry

INGREDIENTS
1tsp cornflour
1tsp soy sauce
finely grated zest and juice 1/2 lemon
1 TBS olive/sesame oil
1 chicken breast cut into slices
1 capsicum sliced
1 carrot sliced
100g broccoli, cut into florets
150ml chicken stock
2 spring onions sliced

METHOD
1. Mix cornflour, soy sauce and lemon juice in small bowl
2. Heat oil over a frying pan and add chicken, capsicum, carrot and broccoli. Cook until chicken is cooked through and vegetables are starting to get tender.
3. Pour cornflour/soy sauce/lemon mixture into pan, add chicken stock and spring onions. Reduce heat and simmer for 2-3 mins.
4. Remove from heat and sprinkle with lemon zest.
5. Store or serve with rice.
