Meatballs and Sweet Potato Mash
MEATBALLS
INGREDIENTS
500 g Mince (beef , turkey or chicken)
1 Onion (Chopped) / small
Ginger (pinch)
2 garlic cloves (finely chopped)
2 Tbsp Soy sauce
1 Tbsp Oatbran
50 g Ham (finely chopped)
2 Tbsp Parsley (Chopped)
METHOD
Soften onion in a frying pan on a very low heat - do not colour it.
Mix all the other ingredients in a bowl then add onion.
Mould into small pingpong ball sized balls fry on medium to high heat (lightly spray the pan with olive oil) and cook through.
SWEET POTATO MASH
INGREDIENTS
1.5kg Sweet Potato, cut into cubes
2 tsp salt
3 TBS butter
Pepper
METHOD
Place the cubed sweet potatoes in a large saucepan and add enough water to cover. Add 1 teaspoon of the salt and bring the mixture to a simmer over medium-high heat. Reduce the heat and simmer, uncovered, until the potatoes are tender (when it’s easy to slide a fork in and out), about 9 to 12 minutes.
Drain well, then return the potatoes to the pot. Mash the sweet potatoes to your desired consistency.
Stir in the butter, and the remaining 1 teaspoon salt. Season to taste with additional salt and freshly ground black pepper.
